Set off by beautiful décor and a lush interior that holds an intimate sixty seats, this Sanderling restaurant achieves a new standard for Outer Banks dining. Chef de cuisine Matthew Redington has put together two options for an evening meal. His Seasonal Chef's Tasting Menu holds such delights as milk-fed porcelet with sage, pickled sweet potatoes and aromatics, a spring onion bisque or slow-baked Maine halibut with rainbow Swiss chard. These dishes reappear on Redington's three-course menu but with expanded offerings that include marble foie gras terrine, Scottish langoustines with ricotta gnocchi and apple purée or heirloom baby chicken with a lemon jus. Dessert concludes the menu featuring a chocolate soufflé with avocado and crushed pistachios, tart au citron or a beautiful artisanal cheese board with all the right accompaniments. The Left Bank's wine list will provide proper selections to enhance your entire meal.
