Salts Description:
One part neighborhood bistro to one part haute dining destination, Salts strains French cuisine through a sterling local sieve. While a dinner-party vibe suffuses this tiny, understatedly handsome space off Central Square, the menu is almost formal in its refinement and precision. Yellowtail sashimi and capers lightly and brightly balance the richness of pan-roasted sweetbreads drizzled with hazelnut oil; classic tours de force like ballotines, done to a turn, meet their modern match in accompaniments like pumpernickel spätzle and smoked grapes. Call in advance if your heart is set on the signature duck for two; the much coveted item has limited availability. Sweet soups have been a Salts hallmark since it opened under its original owner; be it a bowl of hot chocolate with churros or iced-cherry soup with lychees and peppercorn ice cream, liquid dessert is always a treat here.
