At Dish, former Sonoma Valley chef Job Carder continues his relationships with organic wine country farmers and artisanal producers, and shows off some sophisticated techniques in this bustling American bistro. The versatile menu is dominated by small bites from which diners can create their own tasting menu. Among them are charred octopus carpaccio with grapefruit and lemon grass vinaigrette, a petite California-style "boo-ya" (bouillabaisse), rich lobster ravioli with shaved truffles, and a small but pleasant charcuterie plate consisting of foie gras torchon with apple gastric, artisanal duck prosciutto and house-made pâté with stone mustard. Larger plates include steak frites and duck confit. Finish with a gingerbread tarte Tatin with Calvados ice cream or a classic, well-executed chocolate pot de crème. The very reasonable wine list has a Sonoma bent to it, but explores other appellations both domestically and abroad. The storefront restaurant, with eclectic art lining exposed brick walls and a prominent bar, has a festive vibe.
