Owner and executive chef John Bishop has made this tiny, elegant Kitsilano restaurant a Vancouver institution. Apart from the tasteful decor and fine service, the main features here are a vast wine list and, of course, the innovative and eclectic cuisine.
John Bishop warmly greets his guests (celebrity and otherwise), ably assisted by a polished staff. Every inch of the place bears the Bishop trademark of light, understated elegance, and bright, graphic color, from the uncomplicated entrées to the contemporary art on the walls. Bishop is a longstanding supporter of seasonal and organic ingredients. With chef Andrea Carlson, who moved over from Raincity Grill, the food here is now even more imaginative and shows the same simplicity and zealous use of the aforementioned ingredients, including charcuterie butchered on-site from whole animals. Menus change weekly and might include petite Kumamoto oysters with a saké-pear granité, a Pacific octopus terrine with a fava tip and baby fennel salad, or a tender Polderside duck breast paired with a duck confit empanada. Don't miss the local spot prawns or tender lamb in season. Signature desserts include the Death by Chocolate and a moist ginger cake in a pool of toffee sauce. Maître d' Abel Jacinto oversees an eclectic list of fine wines with a notable selection of half bottles.
