Step inside and you may think you took a wrong turn and ended up in Aspen. While many restaurants here take pride in being a little funky, Joseph's Table is upscale, beautifully appointed and ably staffed. Chef and owner Joseph Wrede designs a new menu daily, using herbs from his own garden and the best local ingredients including organic duck and beef. Some perennial favorites include a lobster appetizer served on a masa bread pudding with Mexican-style creamed corn. We also suggest the pan-seared foie gras served with tart sun-dried cherry chutney. The restaurant offers fresh seafood and fish daily, but organic local beef is a highlight. Try the natural flank steak with red chile and cornbread, and the slow-simmered posole, its deep earthy flavors a fine foil for the meat and chile. Traditionalists will enjoy the grilled filet on smashed sweet potatoes with onion rings. The kitchen is also known for its desserts, but you never know what you will get---other than a sweet work of art. The Butterfly Bar offers a soothing atmosphere and notable wine list.
