Though sushi bars number in the dozens in St. Louis, topnotch, personable sushi chefs remain relatively rare. At Nobu, namesake Noboru Kidera is one such rarity. He has transformed a former IHOP into a cool, dignified dining room and sushi bar, using lots of wood and white paint and little else in the less-is-more Japanese tradition. He's good at picking out fine material for his sashimi and carving it with consummate skill. Sushi spans the spectrum, from common rolls to the exciting tastes of smooth sea urchin, sweet tuna, salty red caviar and the unmistakable flavor of salmon, dominant whether the fish is raw, cooked or smoked. Keep an eye out for the grilled fish, too, like a piece of Spanish mackerel or a delicate yellowtail jaw. Tempura is dry, crisp and nicely done. Because the sushi is dreamy, it's easy to be lulled into a pleasant reverie---don't let the bill be a rude awakening. It's worth it.
