The Waterboy Description:
The Waterboy remains one of the major players in Sacramento's high-end dining scene. In fact, it was one of the first to feature seasonal, and in many cases organic, ingredients, long before it became widely popular. These ingredients are transformed into dishes with a European influence, mostly French and northern Italian. First courses range from the simple, such as marinated white anchovies, to the more complex, such as stuffed sweetbreads "Benedict." Mains include gnocchi with ragù of braised lamb, grilled rib-eye and duck breast with beans and summer squash. Daily pasta and fish specials are also on the menu, and diners would be remiss to pass on the house-made desserts, such as almond cake with sabayon and berries or tiramisu roulade cake with chocolate espresso sauce.
