Salt Factory is a venture from the folks at Little Alley Tapas Bar & Restaurant in Roswell. The name references the salts that come from the Himalayan Mountains, and a single shaker of the expensive condiment is available as a showpiece. Styled as a gastropub, the enterprise employs the services of chef Richard Wilt, who cooks everything from tapas to harissa-influenced lamb meatballs to cured meats and Serrano ham. One might start with a rich, spicy spiny lobster bisque, enriched with crab and cream as well as a dab of chili oil. Done in the Southern manner, the chicken potpie starts with Springer Mountain, Georgia, chicken. Among the cured meats is a first-rate Serrano ham, with a thick layer of sweet fat around its edge. The chicken-fried rib-eye steak is tender as one might expect. Pizza is a strong suit, with crisp crusts and inventive toppings. Our sole reject is the smoked salmon, rendered tobacco-like and unpleasant. The place is packed even on weekday nights, understandably as all main dishes are priced under $20. This wine list is serviceable, if not exciting; the beers seem much more appealing.
