Lured from his successful eatery in hometown Wilson, NC, legendary pitmaster Ed Mitchell now presides over Raleigh's most ambitious barbecue joint. A restored old downtown warehouse has been renovated to accommodate pork-loving locals as well as a lively crowd of visitors staying at the downtown Marriott nearby. At his citified eatery, Mitchell cooks "eastern style" Carolina barbecue, for which a whole pig is cooked over hickory charcoal, then adorned simply with the thin vinegar-based sauce that's characteristic of the region. North Carolina's traditional sides---coleslaw, hushpuppies and baked beans---are served, but you can choose from other dishes and sides, such as spare ribs, blue cheese slaw, collard greens, sweet potatoes and macaroni and cheese. Mitchell's mamma's fried chicken is impressive, but the 'cue is among Carolina's finest. Pork fanatics will appreciate the kitchen window, playfully named the "pig bar," where you may sample the hog from head to tail and discover why Mitchell boasts that The Pit serves "everything but the squeal."
