Even the chips and spicy salsa are a cut above the norm, and---who knows?---such treats as a colorful dish of melon cubes may turn up as a complimentary starter. The kitchen pairs cheese enchiladas with spicier dishes---for example, the devilishly hot jumbo shrimp a la diabla---no doubt to temper their fire. Another fiery house specialty, the burro diablo, encloses strips of green chiles, pork chunks and tomatillo sauce in a flour tortilla. On the mild side are such well-made classics as the enchiladas suizas.
