Le Violon d'Ingres Description:
Due to the influence of Alain Senderens, Chef Christian Constant throws his stars to the floor and fights for a more democratic haute-cuisine. This former chef of Les Ambassadeurs has thus eliminated valet parking and fussily decorated tables, in favor of an always chic décor, but more modest, and a cuisine more and more bourgeoise, gastronomic, and local, lowering the prix-fixe menu to €45. Brioche-like foie gras, pork-feet andouilette sausage with wine-red sauce, and a hot vanilla souffle demonstrate the perfection, but, from now on, at sweeter prices. Good wine-list.
