Trio has concentrated on attracting locals, but its reputation reaches visitors from Los Angeles. Its appeal rests on a savvy combination of comfort food and good prices, offered in a bright, contemporary space with enough mid-century vibes to fit happily into the north Palm Springs designer area. Chef Mark Van Laanen brings touches of New Orleans, Miami and Wisconsin to his menu, with dishes such as a Yankee pot roast. The country pâté, made with pork, veal and green peppercorns, is first-rate; the Key lime tart tastes authentically of the Keys; the trio nut torte is richly satisfying. For the summer, he offers a crawfish potpie that shouldn't be missed; the crawfish are cooked in a classic Creole etouffée sauce that blends nicely with the puff pastry crust.
