Cork Tree Inc Description:
Owners Joaquin and Sharon Delgado and Ray and Kathi Rodriguez are veterans of the Coachella Valley restaurant scene: Delgado has headed Las Casuelas Nuevas for more than 25 years, and Rodriguez co-developed the Casuelas Café. So far this is their only venture away from Mexican cuisine, but their shrewd grasp of local tastes has helped them cross the border triumphantly. The place is crowded, with a bustling bar scene that sits cheek-by-jowl with the dining room, yet doesn't impinge on it. The restaurant philosophy begins with the wine list, which is dedicated to California products and is impressively wide in its range. Chef Hervé Glin has followed this lead by using as many regional ingredients as he can lay his hands on, with a special emphasis on the seasonal vegetables that accompany his entrées harmoniously. Signature dishes include a lush foie gras and wild mushroom crème brûlée appetizer and Glin's 36-hour pork shank entrée. There is also a good and varied bar and patio menu.
