Since its founding in the 1920s, Broussard's has earned a reputation among the grandest of the grand old Creole establishments, lavished with finery in the nineteenth century mode. Numerous Creole classics dot the menu, but familiarity doesn't breed contempt in this case. Shrimp rémoulade, beef daube glacé (occasionally available) and a Louisiana-style bouillabaisse all get a new lease on life here, where they're done with originality and flair. Crab is a preoccupation in the kitchen. The evidence comes in a silken bisque of crab and corn, further mellowed with a bit of sweet potato, meaty sautéed crab cakes ready for a dip into a pungent tartar sauce, and a satiny, savory cheesecake seasoned just enough to flatter the shellfish's own flavor. Formally clad, the waiters are most obliging.
