Jäger Haus assembles hearty and satisfying samples of the comforting German cuisine rarely seen in New Orleans. Wiener schnitzel is thin, greaseless and crisp. Potato pancakes are bracingly flavored with garlic. One of the house specialties is the spätzle, the traditional, tiny German dumplings that can accompany any number of main dishes here. They meet their best match next to the Hungarian goulash, where they help sop up the deep, dark, paprika-spiced sauce that smothers roughly hewn chunks of beef. Rabbit liver pâté is smooth-bodied and gently spiked with Cognac, while the schnitte sandwich is like a German bruschetta, with layers of ham, egg, pickle, bell pepper and potato salad all balanced on slices of French bread. Jäger Haus does justice to the European approach to coffee, serving it in nice porcelain cups, while Paulaner Hefeweizen, a wheat beer from Munich available on tap, arrives in stemmed glasses as per the proper Bavarian regimen. It's a casual place with a small bar up front and about ten tables dispersed through two rooms.
