An oasis of fish and shellfish among the usual fried clam and haddock spots, Jay's offers a notable raw bar and fish from all over the globe, including a mere few miles away. The staff is adept at describing the nuances of flavor. They boast of the many varieties of oysters the raw bar offers and can recommend which sauce to augment which local or more exotic fish and shellfish. With simple preparations, the kitchen does justice to its catches of the day---grilled Maine salmon, say, or pan-seared yellowfin from Gloucester---while giving diners a choice of sauces to spice things up, from a "dirty" citrus-Dijon marinade to a lobster velouté (our pick is the smoked tomato sauce with roasted chilies). The bar's a good spot for slurping up clams and dipping crusty hot bread into a big bowl of classic fisherman's stew.
