Doraku Description:
Doraku is brought to you by the Benihana group in the same way Conran hotels are presented by Hilton---a hipper, classier take, in this case, on Japanese cuisine. Doraku transcends the gimmickry of its parent group but takes advantage of its seafood connection by offering an extremely wide array of sushi. Small plate entrées look as though they were designed for the cover of a food magazine. A freshly minced salmon tartare is presented like an ice cream sundae, topped with seaweed, caviar, chives and ladled with jalapeño dressing. The important point: It tastes as good as it looks. So does snapper ceviche and even tofu steak deliciously draped in aromatic ginger sauce and garnished with scallion and rare-to-find fresh wasabi. Saké is taken ultra-seriously---it's worth selecting from one of four formidable tasting menus of four sakés each.
