The Union Grill Description:
Put a pound of black truffles in chef Karl Mace's hands and you'll be surprised at what you get. There might be thin, cheesy noodles with one large, delicate slice of truffle on top or even foam or pearls to delight. Whether the traditional Mainers like it or not, molecular gastronomy has come Downeast to York Beach at The Union Grill. There's a more run-in-the-mill pub attached to The Union Bluff Hotel for unadventurous types, but the elegant Grill room offers something decidedly different. Chef Mace takes regional ingredients and also applies his molecular gastronomy hardware in dishes like Buffalo "Slim Jims" with pickled ramps and picholine olives or hand-rolled mozzarella with opal basil foam and crisp guanciale. While there are many seafood dishes to choose from, we also suggest meats such as a filet mignon with grilled garlic or juicy lamb sirloin with earthy corn pudding. For dessert, return to the familiar with the Boston cream pie, two layers of moist golden cake with Bavarian cream and fudge frosting served with crème anglaise.
