Jian features some whimsical, over-the-top design elements---a Buddha head in smoking water by the entrance, flashing Japanese pachinko gaming machines mounted over the bar and larger-than-life robots hanging out in the dining room---mixed with elegant pendant chandeliers and rustic wooden tables. Among the best starters are jap chae (stir-fried glass noodles and vegetables), pa jeon (sizzling green onion pancake laced with squid) and crispy squid in a citrusy gochujang chili sauce. Barbecue items---you can work for your meal by cooking at the table on an inlaid grill or order them from the kitchen---include rib-eye, beef short ribs and salmon. If you leave the tuna belly up to the kitchen, be sure they do not overcook the fish, which is sliced fairly thin. Other traditional dishes worth noting are mandu guk (chicken dumplings in beef broth) and simmered black cod in a spicy sauce. The kimchi lacks fire at this restaurant that attempts to broaden the appeal of Korean cooking well beyond Koreatown. The attractive lunch deals are a good introduction to this healthful cuisine.
