Chef Mark LoRusso makes the most of the poolside space at Botero. Steak preparation styles range from traditional, chimichurri and pepper steak. The menu also offers whole roasted European loup de mer, a pinwheel of wild salmon with butternut squash and apple risotto, as well as organic roasted chicken with frisée salad and natural jus. Among the many "Extras" are tater tots and roasted bone marrow with onion jam.
