There is no restaurant quite like Chef Mavro. It brings the formidable skills of chef-owner George Mavrothalassitis into a sublime culinary marriage with the finest ingredients Hawaii has to offer, and the results are elegant and intriguing. The dishes created by chef Mavrothalassitis and his chef de cuisine Kevin Chong are inspired by the bounty of Hawaii's ocean and land. Dishes may include tamarind roasted sablefish and celery, cucumber and red radish marinated in yogurt-lemon-extra virgin olive oil, or Keahole lobster paella with roasted red bell peppers, green olives, fried cilantro, lobster-chorizo jus and saffron puff rice. However, Mavrothalassitis does not look back and menus are seasonal with no repetition allowed save for the lilikoi malasadas (Portuguese donuts), floating in a pool of lush fuchsia-hued guava coulis served with pineapple-coconut ice cream. Chef Mavrothalassitis has stopped trying to remove them from the menu---think of it as one small concession by the artist to public demand. So, while we can't tell you exactly what you might eat, we can assure you it will be thoughtfully created and well executed. The hallmark wine pairings are highly recommended. Service is professional but never stuffy and is warmly hospitable as befits a restaurant which attracts serious gourmands of all ages and from all walks of life. You are as likely to see a young couple in casual attire who saved their pennies to dine here as a well-coiffed doyenne of Honolulu society. They all come for one reason: to celebrate culinary excellence from the hands of a master chef and his dedicated team.
