Caffe Vialetto Description:
Once diners are seated at this 50-seat Italian spot---which might take awhile, since no reservations are accepted except on weekends---those who've actually traveled to Italy will immediately notice that there's little that's traditional on the menu except the Italian language. Even a classic-sounding dish like linguine carbonara is prepared atypically, with a reduced cream sauce. Most dishes are, rather than authentically Italian, Italian-inspired creations. But the inspiration is solid, not silly. As items like lush raviolini della Habana (filled with roast pork and sweet plantains, covered with black bean sauce) demonstrate, Caribbean and New American influences can make perfect sense, even on pasta, in the hands of a skilled chef. Also noteworthy: granchi de la laguna (a fresh salmon-lump crab cake) and any of the menu's properly creamy yet toothy risottos. At any rate, though, the menu's mainly just reading material, however tempting. Regulars almost always opt for one of the many daily specials---market ingredient-driven dishes, exactly like in Italy. The warm welcome, also, could not be more traditionally Italian.
