George's Ocean Terrace Bistro Description:
One of three dining choices at George's at the Cove, California Modern lures people to La Jolla for good reason. George's has long been revered for its breathtaking Pacific views although diners' attention is easily diverted once presented with the cooking of chef Trey Foshee. His cuisine utilizes fresh, local produce, and the chef has maintained a longstanding relationship with Chino Farm. The farm-to-table approach may be experienced with both his seasonal nightly fare and the tasting menu, which is not listed, but always available. This five-course dinner is composed of smaller versions of the most popular dishes, such as hamachi with sea beans, radish, cucumber and a soy gelée or the Mano de Leon scallop ceviche with electric flavors of tangerine and jalapeño. The Spanish-style Caesar presents fried anchovy-stuffed olives, manchego and roasted garlic dressing, a heated, delectable twist on the classic. Entrées that impress are the spice seared rare albacore with sesame shrimp balls in a comforting mushroom-ginger broth, along with the memorable muscovy duck breast with foie gras and pineapple miso. The skilled staff includes Dan Chapman, one of the two, third-level sommeliers in San Diego. Approach him about the notable wine list, which offers more than 375 selections. Mixologist Frankie Thahel has composed one of the most innovative drink menus in San Diego. His "Xolo" blends Don Julio Anejo tequila with grapefruit, lemon and honey.
