China Grill Description:
The Chong brothers---Fernando, Roberto and Marcelino---emigrated from Peru in 1975 with some interesting ideas about Chinese fusion cuisine, culled from their heritage and from their imaginations. Chef Robert, as he's known, deftly applies traditional Chinese cooking methods to non-traditional ingredients like butter, cheese, and new-world fruits and vegetables. Interesting dim sum starters include Hunan baby-back ribs, glazed with an orange peel and hoisin sauce. Beef tenderloin in plum wine-pepper sauce is a standout, as are the jade noodles with blackened prawns. China Grill isn't quite as elegant or ambitious as W's China Bistro, the brothers' nearby restaurant, but the food is consistently good and the service professional. The first-rate wine list lends itself to successful pairings. For dessert, consider the decidedly non-Chinese apple tart with passion fruit compote or coconut flan.
