Octavio Becerra, who co-founded the Patina Group, has emerged from Joachim Splichal's shadow with Palate Food + Wine, a combination bistro, wine bar, wine retailer, and culinary library in Glendale. The restaurant is situated on the ground floor of a respected wine storage facility, surrounded by car dealerships. The airy space features towering ceilings, an exhibition kitchen and gargantuan goblets of grapes. Every meal begins with warm gougères and house-made butter dusted with fennel, ground peppercorns and diced chives. The reasonably priced menu of small plates changes regularly due to Becerra's longstanding relationships with local farmers. The "porkfolio" showcases shavings of seven different La Quercia meats, supple slabs of garlic bread and three mustards, while potted rillettes-like meats arrive in small mason jars. Seared sea scallops are perfectly cooked, served with melted leeks, tangerine soubise and roasted cherry tomatoes. Pork belly is always impressive, a meatier-than-expected slab with caramelized skin that might be plated with chioggia beets, Fuji apples and shaved Bermuda onions. Ricotta-filled squash blossoms could be crisper, but feature a zesty tomato fondata, and grilled hanger steak is paired with a velvety green garlic flan, all contributing to one of the most compelling menus on the Eastside. Wine director Steve Goldun's powerhouse list offers an international selection at a range of price points. To encourage sampling, he offers half glasses of many selections, including a crisp 2005 Roger Neveu Sancerre from France's Loire Valley. Palate emphasizes its cheese program, with a menu written by Sebastian Craig of The Cheese Store of Beverly Hills, but there's normally one thoughtful dessert. If they have the buttermilk panna cotta, order it. It features a layer of sweet strawberry compote.

When Palate Food & Wine first opened last May,�I thought the restaurant was located in a mall. Specifically, I thought it was one of the new eateries at the "Americana at Brand" in Glendale. I immediately added it to my "eat there soon" list,�but I hesitated making a reservation because it was in a mall.
For those of you (who like me) thought it was located INSIDE the Americana at Brand, the restaurant is actually a few blocks PAST the mall (if you're coming from the 134 freeway). It's on the right side (on Brand blvd) in between Garfield and Chevy Chase Dr. Just look for the Mazda dealership and you're very close.
What about the food? My husband and I loved it... so much that we ate there two weeks in a row. Chef Becerra was warm and inviting... like we were enjoying a meat at his home. Our favorite server was the charming Monica. Just like Chef Becerra, she made us feel comfortable and very welcome.
During our first dinner at Palate, our table was next to where Chef Becerra was expediting orders... which is absolute HEAVEN for me, except my back was to the chef and kitchen! My husband kept "oohing" and watching as Chef Becerra was finishing the plates before sending them out to diners. I made sure I had the better view on our second visit.
One of our favorite bites at Palate (so far) is a crostini with lighter-than-possible eggs, topped with shaved black truffles. It's an "off menu" item, so ask for it if you love truffles!
