For years, this pair of Vietnamese-inspired joints has been Valhallas for vegetarians in Chinatown and Brookline. So what are words like squid, steak and sausage doing on the menu? Faking it: The kitchen relies on meat substitutes such as wheat gluten and tofu to stand in for animal proteins in noodles, curries, soups and stir-fries. But while the effort is valiant, we'd just as soon see more loving care lavished on good old vegetables.
