Visiting celebrities, politicos and epicureans are spellbound by the innovative contemporary Texas cuisine that defines Jeffrey's. Executive chef Deegan McClung composes skillfully garnished plates that are as appealing as the sophisticated art-filled surroundings. We suggest the foie gras with Champagne-poached peaches or the beet and cherry gazpacho with lobster and crème fraîche. The dynamic menu changes daily and might feature a gutsy entrée of lamb T-bone with soothing apple pudding and a Zinfandel cherry glaze or an elegant Alaskan halibut over a citrusy lime risotto. Some staples appear nightly, however, such as the crispy oysters (among the most famous appetizers in Austin). Worshipers of the cacao bean will enjoy the Valrhona chocolate Intemperance dusted with 14K gold flakes. To experience Jeffrey's cuisine to the fullest, we recommend the three- or five-course tasting menu with wine pairings. The extensive wine list is impressive, and the staff is well informed; no surprise, really, when you consider that some of Jeffrey's waiters have been there for 20-plus years. Half-price "small plates," such as rabbit confit and hanger steak burgers, are available during happy hour at the bar.
