One of Austin's hidden gems, it might be best if the passport-trotting flavors of Casa Colombia remained a secret: there are fewer than 20 tables in the cozy, wooden house. Chances are you won't be familiar with many of the dishes on the menu---pabellón (Venezuelan shredded beef mixed with criolla sauce over rice) or tamal valluno (corn masa stuffed with pork, beef, chicken and vegetables wrapped in plantains). But like the swallows of Capistrano, once you've found such a good thing, you're going to keep coming back. The pescado en cilantro y mayonesa highlights how unique simplicity can transform your notion of a basic fish like tilapia. Ditto for skirt steak, featured in the house specialty (request it with the tart house chimichurri) that comes with chicharrón (bearing little resemblance to Mexican chicharrón) with a fried egg. Fair warning: The food doesn't come out fast, although this is less a cause for concern than it is an opportunity to enjoy appetizers of empanadas, arepas or aborrajado. The bar offerings are primarily beer and wine, along with a few fruit-flavored, frozen sangrías.
