Imperial Fez Description:
Upon entering this lavishly decorated establishment, patrons take off their shoes and prepare to relax on pillows set on the floor or plop into low chairs. Chef-owner Rafih Benjelloun hosts this multi-course Moroccan meal, which is eaten by hand as per tradition, although the timid may employ the use of a fork. Start by washing your hands in the customary manner, holding them outstretched over a brass bowl while a server pours warm perfumed water over them. The experience starts with a traditional soup, followed by a series of salads (carrot is especially good), then b'stilla (pastry-wrapped Cornish hen scented with cinnamon), then the patron's choice for a main course and dessert. We like the braised beef short ribs, spiked by the intriguing but gentle heat of house-cured hot chilies. Main dishes can be completely vegetarian. Special tea is poured from impossible heights above the brass trays that serve as a dining table, and dancers provide suitably theatrical performances, beginning at 8 p.m. (Ladies, you might be invited to demonstrate your style!) It's all in good fun. An à la carte menu is offered Tuesday through Thursday.
