Joanne Tubo has crafted a clever, casual restaurant that achieves substantial refinement in its dishes. She left the pressed-tin ceiling in place as she built out the space in this early nineteenth-century building, including its rough-textured brick walls and adding the warmth of wood. Burgers are available in two sizes at lunch, a nice touch. The dinner menu is understandably more complex. Crispy calamari is a winner, with plenty of tentacles for those who crave them. Don't pass up the beets, dressed with bits of feta cheese. Grilled salmon, pan-seared scallops and pork tenderloin medallions (this with Champagne-braised cabbage) all come with specific accompaniments. Made with penne pasta, three cheeses and bacon, this mac 'n' cheese is worth the drive. For dessert, make it crème brûlée. From Monday to Thursday, a chef's special costs just $10.90. Friday is for half-priced appetizers and a chef's special, while on Saturday, house wines are $10 bottle. The wine list is basic, but on Wednesdays Waterstone Grill offers $3 glasses of house wine and a $5 martini.
