Four Rivers Smokehouse Description:
From the day it opened, Four Rivers has had a line out the door of the tiny space on busy Fairbanks Avenue, hungry fans patiently waiting for John Rivers' prized pulled pork, signature beef brisket, ribs and all sorts of sides. The only seating is at wooden picnic tables out back next to the parking lot, so plenty of customers are there for takeout. Since 2005, civic-minded Rivers has fired up the grill for fund-raisers all over Central Florida, and finally decided to open a modest retail location. Rich slices of Angus brisket, smoked 20 hours with mild-spiced dry rub, win the prize---eat it plain or try it on the Texas Destroyer sandwich, topped with jalapeños, onion rings, melted provolone and a slather of barbecue sauce. Smoked chicken, sausage, smoked turkey---Rivers covers it all in the busy kitchen. More than a dozen sides such as cheese grits, fried pickles, sweet potato casserole and more add up to your basic Southern extravaganza. If you dare, save space for the banana pudding or Toni's Texas sheet cake. Best of all, Rivers donates ten percent of proceeds to benefit local charities.
