Café Protégé Description:
As the showcase for students of the Florida Culinary Institute, Café Protégé features one of the most progressive and impressive menus around. While the affiliation ensures a phenomenal training ground for culinary students, the restaurant is not actually run by the school itself, so don't expect amateur night in the school cafeteria. In a pleasant setting of dark maple woodwork brightened by picture windows, an enthusiastic, beautifully trained waitstaff serves such delicacies as gently warmed baby Brie, soft and perfect for smearing on French bread along with a curry-infused apple-raisin chutney. Fresh grouper, encrusted with pistachios and pan-seared, is joined by crispy julienned leeks, tomatoes and asparagus in a coconut-rum sauce. The rack of lamb, too, is crusted, but with Gorgonzola and lavender, for presentation with Cabernet mashed potatoes, shiitake mushrooms and bok choy ragoût. A bonus: All meat products are free-range, and all vegetables are organically grown.
