If you sense the slick polish of a corporation here, you're right. Burtons Grill is part of a burgeoning chain begun in New England by owners who spent decades at industry behemoths like Outback. But if you also feel a unique, independent spirit, you've nailed it again. It's a small set of restaurants, with one of those owners living nearby, and each has some authority to tweak things to its neighbors' liking, while putting a twist on traditional fare. Dishes are clever and creative, such as eggs risotto for Sunday brunch, and deliver layers of flavor. Menus change monthly, and much produce at this most southerly of Burtons' outposts comes from local growers such as Cullipher's Farms. Fresh seafood can be grilled, bronzed, fried, pan-seared or piccata style. It's hard to resist Tuscan chicken, seared under brick, or 14-ounce aged, grilled Angus rib-eye with caramelized onion-sage butter, but an entire section of vegetarian offerings (mushroom ravioli, anyone?) are interesting enough for carnivores to sink their teeth into. There's even a gluten-free menu. Don't miss the ice cream sandwiches for dessert.
