Brothers Jean and Bernard Campagne, natives of the Basque region of France, run this elegant Old Town restaurant with a near-perfect balance between comfort and style, tradition and innovation. The house specialty is the robust cooking of their native region---a Basque pipérade of vegetables, a filet of pork en confit, hearty bowls of garbure béarnaise---but there's much else to appreciate: beautifully cooked fish, flavorful rack of lamb, loin of venison. Before you order dinner, order dessert, for the heavenly soufflés---Grand Marnier, chocolate, raspberry or hazelnut---must be selected in advance.
