Blue Paddle Bistro Description:
Anchoring a burgeoning bistro scene throughout Lake Champlain's islands is this restaurant on South Hero. Just 20 minutes north of Burlington, the pastoral drive feels like a trip to Martha's Vineyard. And thanks to co-owners Mandy Hotchkiss and Phoebe Bright, foodies have reason to hit the road. The Paddle's cozy décor frames native art alongside a tasteful marine motif, a subdued background against which chef Bright's assured work shines. Her marinated pork quesadilla bursts with chunks of tenderloin that linger with molasses and smoky Gouda. And while fist-size crab cakes are moist enough to enjoy unadorned, a mango chutney tartar brings them to life. We like the sea bass over warmed baby spinach, topped with savory shallots and stamp-size bites of crispy bacon. Cooked in a light citrus wasabi, each forkful of flaky white fish is a delight. The menu moves effortlessly between avocado burgers and soy-glazed salmon, challenging patrons without crossing into gourmet. Hotchkiss serves dual roles as host and sommelier, introducing guests to locally grown varietals, like Snow Farm's Seyval Blanc. And she charms guests as if every meal was a fête.
