Spanish for copper, Cobre in Gastown is named for the copper ceiling scoops radiating from the open kitchen. Begin your evening in the sexy bar, where they muddle gently priced mojitos and Latino-themed cocktails like there's no maƱana. Chef Stuart Irving, who had a Mexican mother-in-law, is a fiesta-fired follower of nuevo Latino and a longtime exponent of tapas dining (consider Wild Rice, Bin 941). From this kitchen he serves up a greatest hits list of the Latin larder---small plates of sprightly seafood ceviches, a comforting oxtail posole, lush Dungeness arepas, and trios of tacos with pulled duck, salmon or pork saddle. Jason Kelly's hip wine list leans toward the Southern Hemisphere---spot-on pairings for the Latino offerings.

Cobre undoubtably has the best guacamole in the city. The fusion between South and Central America is simply stunning. Many ingredients are local and amazingly fresh. The room has high ceilings,high windows to match and gorgeous hardwood floors.I can honestly say that I've never seen presentation quite like this. The price is right, you could realisticly go on a twenty dollar budget.
