The motto "ethical luxury" underlies executive chef Robert Clark's focus on sustainability in his menu creations. As C Restaurant is the founding restaurant in Vancouver Aquarium's Ocean Wise Program, Clark deals directly with fishermen who pursue their craft with respect for the environment. The restaurant's contemporary design is as innovative as the food---check out the stand-up bar stools. In summer, guests often linger over lunch on the patio for an entire afternoon. Chef de cuisine Quang Dang aims to make his mark with unexpected ingredients such as Granville Island sake lees. Whatever special is offered, don't hesitate to order it---they're consistently first-rate. In season, try crispy trout, twice-cooked sablefish, or spot prawns sourced from local waters. C's direct line to the local catch is reflected in its $98 six-course tasting menu (add $50 for wine pairing) featuring cured Bayne Sound scallops and rare seared albacore tuna with a sweet chocolate brownie finale. As for the wine list, there's a broad range of eclectic international labels; wine service is informative without being pretentious or intrusive.

C Restaurant is just a very assuming and pretentious place. I have never heard of any restaurant charging for an "amuse-bouche", let alone $14 for a single scallop!
C Restaurant is serving the kind of bland insubstantial 'nouvelle cuisine' that restaurants in the US and UK just can't get away with anymore.
C Restaurant's saving graces are that the ingredients used are obviously of high quality, that the service was good and that the atmosphere was excellent, especially the view. But alas, none of that is enough to warrant a repeat visit from us.
We were expecting a really great experience at C Restaurant due to the various reviews, and I'm afraid it really disappointed everyone in our party.

At least twice a year, I get sucked back to C Restaurant by out of the price is high, owners who have heard 'good things'. Every time I walk out with the same feeling... the food is always average, the service is hit and miss. The ONLY constant and redeeming factor is the room and patio, but they can't make up for the others.

The 'wow' factor here is the location and decor (or the lack thereof). By that, I mean the minimalist interior decor, big sheets of glass, and ample natural light combine to give you that outdoor waterfront feel even if you are sitting indoors. I can't think of another waterfront restaurant off hand that can match this. A close second may be the Lift, but in a very different way.
