Chef Frank Pabst knows and loves fish, even the "unsung heroes" of the deep, or the yet-to-be-overexposed delicacies from the Pacific, such as green sea urchins. Stop first at the main bar in this 100-year-old converted warehouse where you'll slurp Fanny Bay oysters and sip Champagne. Move on to the sushi bar to savor Yoshi Tabo's wild salmon sashimi with chilled saké. Finally, settle into a plush banquette in the dining room and enjoy a towering, three-tiered signature seafood platter or one of Pabst's delectable underdogs in that night's spotlight. It was nothing extraordinary. The steaks were not done up right. Unfortunately the waiter never offered to replace them either. It is an expensive place and no wonder not busy. Probably not return.

It once had it, but I think its time has come and gone.
Went with 2 other couples (6 people total) and all agreed. It was better. Perhaps it was just this one night, but things were really off. The service was just ok. We had a few drinks at the bar first, and the bartender really knew her stuff, assisting us with two orders of wine. Once at the table though, the waiter left a lot to be desired... attitude, knowledge, just not there.
Then the food... Sushi is still first rate, and everyone agreed to that.... The mains were not good though. All the sauces were VERY heavy and seemed to have a lot of sodium.
We didn't end up staying for dessert.
I think that Blue Water will see a steady decrease in patronage. Since they opened, there has been a steady flow of new trendy restaurants opening in Vancouver, and you have to do MORE to get the business and keep the staff. I think Blue Water Cafe may not be staying ahead of the curve, and will unfortunately, pay the price.

What a meal! went for a work dinner. Started with the seafood tower, amazing oysters, sushi, smoked salmon and even jellyfish. That was enough in itself. Then had what I would rate the best steak I have ever had. Followed by the Molten chocolate cake and creamy cafe latte. Excellent service but you have to pay for it.. well worth it

We started with the seafood tower which was great, the sommelier was on had to recommend a great wine to accompany everything.
Our friends enjoyed three entree's which we shared, Black Cod, Lobster and Beef Short Ribs, all very strong dishes.
Service was good but we had a waiter that was very chatty, my friend asked him where he was from due to an accent, and he ended up telling us his life story for 10 minutes. My wife enjoyed that though...
Desserts rank near the best I ever had. We shared a molten chocolate cake... very caloric and good!
Overall I would definitely repeat, as Blue Water has it all, food, wine, atmosphere and service.

My husband and I frequent this restaurant, and we consider it one of our favorites! After eating a delicious starter (any will do), the short ribs are always amazing, as is the steak and the fresh fish. The service is usually very good, although we've had to wait a little too long on some occasions.Don't expect a cheap night out....but it's well worth it!!
