Self-proclaimed freestyle Asian cuisine, presented by the brothers Kevin and Robert Valaika, located on the upper floor the Main Street Mall in Old Town.
Kevin and Robert Valaika, disciples of restaurateur Bill White (Grappa, Wahso, Chimayo, Windy Ridge, Ghidotti's), are behind this Park City hot-spot. Shabu offers what it calls Freestyle Asian Cuisine, a mixture of Japanese, Thai and Chinese influences. The chic hardwood and mahogany fixtures blend well with the modern art, dim lighting and loud voices desperate to be heard over the live music. We find our appetites piqued by starters like spicy tuna rolls, Vietnamese spring rolls and tsunami crab cakes. Entrées include a sleek, but small-portioned, saké-steamed sea bass brushed with garlic and black bean paste; and juicy wok-seared diver scallops surrounding mango fried rice. Less appealing is the namesake shabu-shabu (the term evokes the sound of pieces of food swished back and forth in hot broth), which feels like eating an entire meal of bite-size appetizers. Diners skewer less-than-top-quality pieces of chicken (or beef or tofu) and common vegetables, boil them in either a Thai coconut or vegetable broth and eat them with a small bowl of pasty noodles. To compensate, make sure to order the decadent chocolate truffle cake or you might leave hungry. In the summer, seat yourself on the outdoor deck where there's live jazz and a sushi bar overlooking Main Street.
