Cantonese food lovers in Tokyo troop to this elegant Chinese restaurant to get their fix of authentic Southern cooking. At dinner, fresh vegetables and seafood are displayed on portable cooking wagons that are wheeled to tableside so diners can choose the materials and then observe the chefs in action at the same time. Few Chinese restaurants in Tokyo have this set-up. Go for the dancing shrimp, the seafood stir-fried in ginger, and the chef's specialty: the osusume tokusei soup, which is a healthy broth the color of the earth, filled with seafood and root crops. Then end your meal with a plate of leafy green vegetables stir-fried in salt and century egg, and a steaming bowl of thin egg noodles in a spicy broth of ground walnuts and chili oil (tantanmen). The desserts are more memorable for their charming quaintness, such as a golden-colored mango pudding shaped like a smiling goldfish, including tapioca beads for eyes.
