Tucked away on the third floor of the Conrad Centennial Singapore, this dining hall is smart without being overly ritzy and classy without being too pompous. Chinese artworks adorn the cream colored walls of the golden pinewood-furnished restaurant, which draws a well-heeled crowd with its innovative dim sum menu and well-executed Cantonese cuisine. Fresh lobster sashimi is served with wasabi, its sweet flavor a clean meal-starter. Follow with the crispy Peking duck served with scallions with a sweet sauce on the side. We also recommend the bisque-like savory broth of sharks bone double-boiled with sea whelk, dried scallops and fish maw; note that this dish must be ordered in advance due to extensive preparation and cooking time. A fish dish is then in order---go with the soon hock steamed Cantonese-style (with ginger and spring onions in soy sauce, topped with coriander); it's served with the head, tail and bones. Those who prefer individual portions may consider the perch filet, which is steamed or grilled per specifications. End with the signature dessert: avocado cream with ice cream laced with passion fruit seed.
