DOMVS, the Italian Restaurant Description:
There is only one Italian restaurant in Singapore that lays claim to serving authentic Sicilian cuisine, and even its wine list features only Italian labels. That's DOMVS, with chef Lino Sauro at the stoves. The décor is classic: think a neutral palette against flowing drapes and wooden armchairs with red leather padding. A show kitchen is partially seen through a glass-lined picture window that doubles up as a wine rack. Start with the refreshing octopus carpaccio, draped with a thin veil of toasted focaccia on a fennel salad dusted with shaved, cured tuna belly. We also recommend the whole-wheat stracci pasta tossed with spicy sausage, garlic, tomato and basil leaves, then topped with ultra-sweet shell-on scampi. For a main course, the seafood soup is a hearty bouillabaisse-like dish with mixed crustaceans served adrift a thick broth blended with vegetables. For dessert: candied citrus strudel with a light pastry and black fig sorbet, subtly sweet, is a proper finale to a hearty meal.
