Amuse Bouche Fine Dining Description:
Chef Sylvain Rivet catered in Simi Valley for years before opening his restaurant. The room is pretty with its gold hues with blue touches and comfy chairs. Part of the dining room can be screened off for private parties. There aren't many seats, so be sure to make a reservation. Rivet's seasonal menu has some wonderful French classics like frogs' legs Provençal, escargots broiled in butter and endive salad. The bouillabaisse is chock full of seafood like clams, mussels, fish, a huge prawn and (for only $14 more) a lobster tail. Fish dishes change often, but the salmon is usually topped with a crispy potato crust and sits on a confit of fresh veggies. The rack of lamb is a lovely usual suspect, although its herb treatment may change from time to time. You're likely to find a good steak offered, like filet mignon or a New York cut. For dessert, you can choose cheese (one to five selections on a plate) or sweet treats like a tiny crème brûlée, warm apple tarte Tatin with a vanilla-rum sauce or one of Rivet's ever-changing specials.

Coming from New Orleans and Baton Rouge Louisiana by way of San Francisco, we found Ventura county in short supply of good French restaurants. Boy were we ignorant! Stumbling into Amuse Bouche we found a real treasure, an honest French restaurant serving excellent food at modest prices.
The servers Dominick, Tommy, and Tyler made us feel very welcome in an almost home-like atmosphere. They were great at suggesting wine and food pairings.
French restaurants are notorious for close quarter seating, making intimacy improbable. Amuse Bouche modifies that concept and adds space between tables, allowing for more private dining moments. Add to that comfortable seating and you can easily dine for two or three hours (normal for the French - what's the big hurry anyway?)
Attentive service and a warm setting start a great evening. The food, wine, and conversation (read - bring a good friend) perpetuate it. Chef Rivet opens with the restaurant's namesake - amuse bouche - something that tantalizes the pallet and prepares you for what is yet to come. In our case a small pastry cone filled with shrimp, ahi tuna, and vegetables in a wonderful sauce that escapes mortal description. The servers paired it with a delightful Chardonnay. It led us into a fantastic escargot appetizer. The flavors were complex and intoxicating. We finished off the remaining sauce with Amuse Bouche's excellent breads. This appetizer is worth repeating often.
I like French cuisine because presentation is equally important as flavor and aroma. Chef Rivet served us a Belgian endive salad with pine nuts and a champagne vinaigrette. The endive lettuce was cut in smaller pieces that looked very much like hearts of palm. The French are tricky that way.
We had filet mignon and rack of lamb, both prepared perfectly medium-rare. The lamb was the best I've ever had (I order rack of lamb whenever its available). Again the servers paired our food with a Fess Parker Petit syrah that did not overpower the delicate flavors Chef Rivet imparted into both dishes. We finished the meal sharing a pomegranate cr�me brulee topped with strawberries, raspberries, and blueberries.
The atmosphere was casual, friendly, and relaxed. I recommend Amuse Bouche to anyone wishing to eat a terrific meal prepared by a skilled French chef who uses uncommonly good ingredients and enjoys excellent service. The prices are very reasonable (icing on the cake).
If you live in or around Simi Valley, CA you've got to be stupid not to try this restaurant. You won't be disappointed.
