Created by Paul Fleming to pair traditional Chinese cuisine with fine wine, P.F. Chang's kitchen is sometimes inspired and nearly always reliable. Dishes are artfully presented and service is friendly and knowledgeable. Start your meal with the Chang's Chicken in Soothing Lettuce Wraps or Harvest spring rolls. The hot-and-sour soup is silken and well seasoned. Be cautious with the ahi salad, which is sometimes overwhelmed by Chinese five-spice. If pairing wines with Chinese food has always baffled you, this is your opportunity to select a wine from the carefully chosen list designed to complement the dishes. Orange peel chicken---plump pieces of chicken breast candied in orange glaze and zest---marries nicely with a glass of New Zealand Chardonnay.
