P F Chang's China Bistro Description:
This dramatically decorated Chinese bistro is always packed, and one of the biggest reasons is their addictive little lettuce wraps, which may soon rival in popularity such cultural food phenomena as potato chips and peanut butter. Fleming's interpretations of traditional, Chinese seafood, meat and poultry preparations deftly straddle that middle ground where authenticity meets the mainstream. And the accessibility of Fleming's wine program---in terms of both its extensive by-the-glass inventory and modest-by-industry-standards mark-up---is nearly as valuable a public offering as shares of his company stock. Some say P.F. Chang's is too Americanized and not really Chinese. Others say it's as much a fashion show for trendoids as it is a food experience. But given its success, who can argue that Chang's not only talks the talk but woks the walk as well?
