Brothers Greg and Gary Butch joined founders Elizabeth and Michael Terry as partners back in 1998, and today operate this Savannah establishment as its sole owners. The stately, early twentieth-century mansion, framed in a walkway of agapanthus flowers, is the setting for contemporary dishes that feature coastal Southern ingredients. Chef Kelly Yambor offers a tasting menu of seven courses for $90. The flavors of the region are prepared not in a down-home style but in the elegant, refined manner that one might have enjoyed in this fine residence in years past. A pair of cheeses--oven "fried" goat cheese and Halloumi---is served with spoon bread and local honey. A trio of smoked fish---the trout coming from a specialty source in the north Georgia mountains---make a fine match with one of the restaurant's Rieslings. Truffle-perfumed, briny Sapelo Island clams come in a light broth. Flavors with historic associations may surface in such dishes as the seasonal river shad, said to have been George Washington's favorite fish, cooked in parchment paper with its roe. Locally grown vegetables, including some from the garden behind the mansion, grace this kitchen. The wine list is a remarkable arrangement of wines from around the globe, and Riesling enthusiasts will be especially charmed by the number of high-quality selections offered. After more than 20 years, the restaurant still oozes romance, history and the quiet life of Savannah.
