Mu Du Noodles Description:
In a city where restaurants are routinely lapped up and subsequently spat out faster than a Lamborghini going 0 to 60, it's nothing short of amazing that Mu Du Noodles has not only survived---but thrived---in Santa Fe for more than a dozen years. But Mu Du, overseen by chef-owner Mu Jing Lau, is an exercise in goodness disguised as a humble restaurant located on a swatch of asphalt in a tourist-free pocket of Santa Fe that somehow, night after night, still draws many diners. The dimly lit dining room hums with deep sighs for Lau's cooking, where the deeply flavorful and complex Southeast Asian flavors traverse from China and Japan to Thailand, India, Malaysia and Indonesia. The board includes a fragrant lemon grass soup buoyant with seafood, shrimp balls and mung beans; a pungent green Thai curry stocked with fresh vegetables, and your choice of organic chicken, seafood or tofu; Singapore noodles swathed in a mellow yellow curry; and crisp-edged Indonesian dumplings plump with lamb and garlic and served with mint-cilantro sauce. It's unusual for an Asian restaurant to excel with libations, but Lau's wine, beer and saké roster is nothing to shake your chopsticks at.
