Though the dining room of the Inn of the Anasazi, a luxury hotel, serves breakfast, lunch and dinner, it really shines at night. The cinnamon-chile rubbed beef medallions are an impressive blend of flavors, especially paired with chipotle and white cheddar mashed potatoes and mango salsa. Daring diners will like the buffalo osso buco with polenta spiked with ancho chile; the less daring will like the juicy oven-roasted chicken breast with potatoes and green beans. The ambience is as enticing as the menu with cave-like dining rooms bedecked with stacked stone accents and walls beautifully stenciled with petroglyphs---the rock paintings that were the specialty of the Anasazi people. The Anasazi lived across New Mexico from 800 to 1300 AD and then seemingly disappeared. Their beautiful stone paintings attest to the creativity of their culture.
