Guests are attracted to the Sycamore Mineral Springs Resort for its health and wellness services, which don't stop at the dining room door. The restaurant offers an array of healthful, seasonal fare with Mediterranean and Asian influences---it's definitely not diet food. Salads aren't boring, like the house salad of fresh greens topped with a jumble of roasted red and golden beets, goat cheese and toasted walnuts. But it's the entrées that really impress, like the nori-wrapped Fiji tombo tuna served with herb-flecked rice and crunchy Asian slaw, or seared salmon with Thai curry sauce, pineapple-jicama slaw and basmati rice. Just because it's healthy, doesn't mean you can't have some fun: the signature chocolate torte, gilded with ganache and a 23-karat gold "G," provides a decadent finish. The well chosen wine list features moderately-priced local varietals and an excellent selection of wines by the glass. Friday evenings in the lounge, a small jazz combo accompanies the wine tasting. Each month, a featured local winery provides a complimentary tasting of their wines to pair with a special, small-plates menu.
