Tangy pickled onion jus nicely cuts the richness of oxtail ravioli, porcini and salsify. Meats are first-rate, from four sultry and delicate preparations of Colorado lamb to the indulgent steak menu, featuring a corn-fed Nebraska porterhouse cooked just right. Richardson's roster of house-made sauces (béarnaise, bordelaise) includes a chef's signature, smoky version that should not be missed. From light to indulgent, salads to seafood, steak or game, every dish here feels pampering---including pastry chef Audrey Yee's exuberant dessert menu, running from seasonal soufflés to a chocolate cupcake with a center of salted caramel, paired with vanilla milkshake shots.
